Cherry & Almond Raw Flapjack

I decided to make an old favourite of mine Cherry & Almond Flapjack.
I didn’t get as far as dehydrating it as it tastes great just as it is.
This is quick, nutritious with cashew nuts and oats to fill you up. These are perfect as a breakfast or snack bar. Would also be good before or after exercise.
Equipment:
Food processor
Coffee/Grinder mill
Ingredients:
1 cup cashews (ground into powder)
1 cup oats (ground into flour)
7 dates (mixed to a paste in coffee mill)
2 tbsp agave or honey
1 cup cherries seeded and halved
1 cup blueberries
1 tsp almond essence
Pinch salt
Mix all ingredients in food processor
until your required consistency (add more oat flour if need be)
Eat straight away or freeze for 2 hours for a firmer bar removing halfway through to cut into bars.
Keeps in fridge for 2 days.
Enjoy πŸ™‚

Happy New Year may 2013 be all you need it to be!
We all get the Snack Attack at times. You no the one where you fancy something to eat yet not sure what. You look in the cupboard and nothing leaps out. I got myself a lovely set of glass heart jars, they look pretty on the worktop and are functional. I filled one with a mixture of healthy raw snacks to help fulfil the snack attack! I’ve put a mixture of Goji berries, almonds, hazelnuts, dates, cranberries and cacao nibs. This covers something sweet, something crunchy, something chocolate and all healthy πŸ™‚ try this yourself and share your snack attack mixture with us.

These Chilli Kale Chips I have created are amazing! They hit all the spots for me, Sweet, Savoury, Slightly salty, Spicy and most of all that pleasing crunch! kale is a superfood! 28 day Raw Angry Monday!

I’ve woke up feeling very angry and agitated! Why are us Vegans/Raw Foodies the odd ones out ? We are the sensible ones! We care enough to try and make a change, yet we are penalized for our choices! We are looked at by some (not all) people as crazy, neurotic, weird, two headed beings! I can probably take all but the last one most days πŸ™‚ seriously though what is going on in the world! What is so weird about eating wholesome natural food that Mother Earth provides ? Oh it’s normal to eat food that has been made in a factory using ingredients that I cannot even pronounce, oh that’s fine! That’s normal! Yet little ol me eating natural food, I’m odd! To be honest I’m glad I feel this emotional about it because I am proud to be me! I am no longer going to make excuses or pretend I’m not hungry etc I am entitled to eat whatever I like without any questions asked. It’s my body, my life and my choice!! Today I have eaten fruit, salad with avocado pear, walnuts, goji berries, almonds and wasabi dressing.
