Mint Chocolate with Crunchy Choc Chips

My new creations Crunchy Mint Chocolate!
I love the flavour of mint match matchers, becoming Vegan meant I had to lay them to rest.
I thought I’d create my own Raw Vegan version ๐Ÿ™‚
They are delicious.
Follow my basic chocolate recipe
then add
1 teaspoon natural peppermint flavouring
Half cup cacao nibs
Fresh mint leave to garnish and add lovely fresh mint flavour.
Place in fridge for 1 hour and Enjoy ๐Ÿ™‚

Raw Choc Chip Banana Cookie with Cashew Cream

If you are feeling rather naughty these are for you ๐Ÿ™‚ they are chocolatey, gooey, sweet cookies filled with cream. You can even freeze them for a few hours to create an ice cream sandwich.
Chocolate banana cookies
Ingredients:
1 cup ground almonds
1/2 cup flax meal
2 bananas
2 desert spoons coconut sugar
2 heaped desert spoons cocoa powder
4 dates
1/4 cup cacao nibs
1 level desert spoon maca (optional and personally I would not use if making for young children sensitive to stimulants)
1 spoon lucuma powder (optional)
1/2 cup water
1 desert spoon melted cocoa butter
2 desert spoons melted coconut oil
Directions:
place everything in blender and blend until resembles batter mix.
Try not to eat it all now ๐Ÿ™‚
Spread on non stick dehydrator trays and dehydrate 115 for 10 hours.
You can cook on low heat in oven for around 1.5 hr, will not be raw yet still delicious and better than processed yukky stuff!
Cashew Cream
Ingredients:
1 & 1/2 cup cashews ground into a flour with coffee mill then soaked in 1/4 cup water until soft
2 tsp Vanilla essence
Agave nectar syrup or Honey to taste
Directions:
Grind cashews into a flour with coffee mill then soak in 1/4 cup water until soft
Drain excess water from cashews then blend until desired consistency adding water if requires
Add Vanilla essence
add agave or honey to taste
Place in piping bag and decorate cookies.
Enjoy ๐Ÿ™‚

Raw Parsnip and Pumpkin seed crackers

If you want to use up left over vegetables from the week these are for you! I made a juice from various vegetables I had over.
I decided to make crackers, bread and cakes with the pulps.
Here is the parsnip pulp made into crackers.
Recipe will follow shortly.
They are in dehydrator now ๐Ÿ™‚

Cherry & Almond Raw Flapjack

I decided to make an old favourite of mine Cherry & Almond Flapjack.
I didn’t get as far as dehydrating it as it tastes great just as it is.
This is quick, nutritious with cashew nuts and oats to fill you up. These are perfect as a breakfast or snack bar. Would also be good before or after exercise.
Equipment:
Food processor
Coffee/Grinder mill
Ingredients:
1 cup cashews (ground into powder)
1 cup oats (ground into flour)
7 dates (mixed to a paste in coffee mill)
2 tbsp agave or honey
1 cup cherries seeded and halved
1 cup blueberries
1 tsp almond essence
Pinch salt
Mix all ingredients in food processor
until your required consistency (add more oat flour if need be)
Eat straight away or freeze for 2 hours for a firmer bar removing halfway through to cut into bars.
Keeps in fridge for 2 days.

Lazy Almond Milk

This recipe uses Raw Almond Butter ( buy from here )
Or make your own check out the Rawtarian for a great recipe Rawtarian
1-2 tbsp Almond butter (depending how strong you like it)
3 cups Water (not tap)
3 dates
Put all ingredients in your food processor or use a hand blender.
This will keep in your fridge for three days in a sealed jar.

Sweet Chilli Kale Chips

I find an integral part of staying raw is to satisfy our desires that were created in our old ways of eating. For me I like crunchy food! Do not get me wrong I absolutely love the crunch of fresh lettuce, kale, apples etc Kale chips meet a different desire we have to crunch away on something that feels decadent. These Chilli Kale Chips I have created are amazing! They hit all the spots for me, Sweet, Savoury, Slightly salty, Spicy and most of all that pleasing crunch! kale is a superfood! Raw No cheese and chive mayo!

Try this beautiful creamy mayo in a raw taco. It hits so many spots. Bring it on!!

Recipe:
Cashew Nut Mayo Cheesy Chive
Half cup soaked cashews (soaked in healthy water, not tap! for 4 hours if possible)
Juice of half lemon
Drizzle of sesame oil
A tablespoon of chopped onion
Salt only a little (Celtic sea salt)
Agave syrup 2 tsp or a couple of dried dates
Dried chives or fresh if possible 1 tbsp
Pinch turmeric
If you like more of a cheesy taste you can add a spoonful of nutritional yeast full of B vitamins too.
Whizz up in your blender with some water to desired consistency.
Then enjoy immediately or saves for a few days in fridge.
